Objectives:

  • to activate students’ vocabulary;
  • to develop students’ reading skills based on a given text;
  • to practice speaking in dialogues and monologues;
  • to deepen students’ knowledge of national cuisines of different countries;
  • to practice using the 2nd Conditional

Equipment: English, O. Karpiuk (Student’s book); sheets of paper with the text and tasks; cards; multimedia application

 

                                             Procedure

I. Introduction

T: Good morning, children, I’m glad to see you. Today we are going to speak on the very important topic “National cuisine”. There’s no doubt that food is very important in our life. People and all living can’t live without eating. Each country has its own eating traditions. So, we are going to speak about food, eating habits and eating out in restaurants, cafes, our favourite dishes, likes and dislikes.

 

II. Warming-up

T: First, please answer my questions:

1. Do you like cooking?

2. What is cooking for you: an art or a dull every day duty?

3. Who usually cooks in your family?

4. What national Ukrainian dishes do you know?

5. What is your favourite food?

6. Would you like to open any exotic restaurant in your town?

7. Would you like to be a chef?

8. What are the popular dishes in your family?

9. How often do you eat out? What’s your favourite café?

 

III. Main part

2. Speaking

  1) T: Nowadays eating out is very popular in all countries and large cities. Sometimes people spend much money on it. Our town also has a wide range of restaurants and cafes offering cuisines from different countries. And, of course, our Ukrainian cuisine is among the most popular ones.

You have been to different cafes, I’m sure. And you had to split up into groups and find out information about the places for eating out in our town. Now, let’s make a brief presentation of your favourite cafes, restaurants, etc.

   

P1: If you want to eat tasty food at reasonable prices come to our local ………..

They use only healthy ingredients; the menu is rich and includes different dishes of our Ukrainian cuisine. There are always new interesting recipes. The chef treats guests to their specialties. To make the client feel comfortable, the service is efficient and the waiters are attentive. The dish I like best of all is … which consists of …..

They are waiting for you every day from 10 am till 11pm.

  

 P2: There are some rather expensive restaurants in our town. One of them is …. The prices are high so people eat here on special occasions only, but waiter’s politeness, smile and attention make the clients feel comfortable. In the evening live music turns the restaurant into a unique place both for private and business occasions. The restaurant focuses on the traditional Ukrainian menu and can offer its guests an unforgettable experience of divine gourmet pleasure.

The place is perfect for a romantic evening.

   

P3: I have been to …… and I want to share my opinion of the service, food and prices in the café. Their cakes and desserts are great. You know I’m a sweet tooth. I love their chocolate and yogurt cakes, fruit salads and fantastic jellies. Their juice is always fresh and cool and their coffee is always strong and fragrant. They have got a wide choice of tea: black, green and flavoured. As for me, I like orange tea best of all. The waitresses are always polite and helpful. They can recommend you something new and quite unusual. And as for prices, they are reasonable. So, if you want to enjoy something really delicious, then go to …….  ..

   

P4: I’d like to tell you about Pizza House “Pronto”. This place is popular with young people and teenagers. The atmosphere is informal and cheerful, the service is quick and the prices are reasonable. Food on offer includes hamburgers, pizzas, salads, French fries and fizzy drinks. Some people however find places like Pronto too noisy and the food too greasy. But it’s up to you where and what to eat.

   

P5: The café which I like best of all is located in the centre of our town. It’s called Triumph. It’s great for children, families and big groups of friends. It’s always busy and lively. The menu is traditional for my taste. The most delicious main course I tried was the country stew which consists of potatoes, carrots and peas. It tastes good. The vegetables are always fresh. As for the dessert I’d recommend to try the apple pie and different jellies. The prices are not high and the service is quick, the staff are polite. The café has faithful clients coming back again and again.

  

2) T: We like going to cafés with our family or friends. And you were given tasks to make up dialogues about eating out. Who is ready?

ANN:    Let's drop in here. This restaurant is famous for its service.

BOB:     Waiter! Is this table vacant?

        WAITER:     You're welcome, sir.

A:    Shall we have any appetizers for be­ginning?

B:     I think we will. I'd like to have fish in jelly. It's delicious.

A:    As for me, I'd like some salad and caviar.

B:    And what shall we have for a drink?

A:    Orange juice and mineral water.

B:    Shall we begin with starters?

A:    I don't want to.

B:    Tell us, please, what meat courses are there on menu?

       W:   There is beefsteak with mushrooms and rissoles.

A:    Are there any fish courses on menu?

        W:    Of course! Stuffed fish, salmon, fish pate. Besides, there's roast chicken and chops.

B:     What side-dish shall we order? I think, cauliflower and green peas.

A:     Waiter, bring us one stuffed fish, two salmons, two beefsteaks with mush-rooms and one veal chop. Two coffees.

         W:   Would you like ice-cream to coffee?

B:     Yes, please.                                                         

 

Dialogue 3

Waiter: Good evening sir, madame.

Mr Smith: Good evening. We have a reservation for a table for two in the name of Smith.

Waiter            You’re welcome. Would you like to come to the table or would you prefer to order in the bar?

Mr Smith: We'll order in the bar.

Mr Smith: Not really. Could you recommend something.

Waiter:           Certainly sir. The fresh lobster is particularly good this evening and for starters may I recommend a light consomme?

Mr Smith: Sounds lovely, what do you think dear?

Mrs Smith: Oh yes, I love lobster.

Waiter: So, that's two consomme and two lobsters. Would you like to look at the wine menu?

Mr Smith: Why don't you bring us what you think will go best. Nothing too expensive though.

Waiter: No problem sir. I'll call you as soon as your table is ready.

AT THE RESTAURANT

Waiter: Good evening. Two for dinner?

      Boris: Yes, that's right.

Waiter:  Where would you like to sit? Would you like this table by the window?

      Boris: Yes, that's nice. Could we see the menu?

Waiter: Certainly. Here it is. Shall I give you a few minutes to look at it?

       Boris: Yes. We'll order in a few minutes. Do you want an appetizer?

Natalie: Hm. I think I'll have a shrimp cocktail. I'm crazy about shrimp. What about you?

       Boris: I'm not sure. I can't decide.

Natalie: Oh, if I were you, I'd have the smoked salmon. You always say you like smoked salmon, and you haven't had any for a long time.

Waiter: Are you ready to order now?

       Boris: Yes, one shrimp cocktail and one smoked salm­on, please.

Writer: Fine. And the entree?

       Boris: Well, we can't decide between the veal and the chicken. What do you recommend?

Waiter: Both are good, but if I were you, I'd have the veal. It's the specialty of the house.

       Boris: Then we will have some.

Waiter: What would you like with the veal? Maybe some vegetables?

Natalie: Yes. Some zucchini, some carrots, and some boiled potatoes.

Writer: All right.  Would you like a bottle of red wine? May I suggest something?

Boris: Sure.

Waiter: Why don't you have a carafe of our house Wine. It's Chilean. You'll like it.

     Boris: That sounds fine. Let's try it.

 

3. Reading

    T: As it was mentioned our Ukrainian cuisine is one of the most popular ones. Let’s read about our national dish. Can you guess what dish it is? Of course, it’s our Ukrainian borshch!

You must read the text and do two tasks: match the paragraphs with their headings and choose the correct answer.

                                                       Ode to borsch

 

       1. In Ukraine, a meal would be incomplete without a soup course. Be the family rich or poor, soup is a daily "must". Soup never boils with a full boil but simmers gently for hours. Hearty soup, enriched with chunks of meat constitutes the basic meal of any peasant family.

       2.  The varieties of soups are as numerous as the cook's imagination is capable of dreaming up. An ingenious homemaker is able to cook a delicious soup from available products, even when the supplies are low. Though Ukrainian soups are numerous, each having its own name, basically they belong to one or another of the following classifications: vegetable, fish, broth, cereal, cream or milk.

      3. Borsch with its many variations is the most popular as well as the national soup of Ukraine. The true old country style borsch is a mildly tart vegetable soup with beets predominating. It has a good chunk of meat, usually pork, cooking in it together with the vegetables. That's why Ukrainian borsch is a substantial dish, and a meal in itself.

      4. Ukrainians have several varieties of borsch, depending on regional and personal preferences and on the season of the year. The spring borsch made of tender young vegetables is favoured by all. One distinctly different spring borsch is made of sorrel leaves. Mild tartness in borsch gives it a specific character.    

 5. The finishing touches to borsch vary with local and personal tastes. Some like it slightly thickened with a tablespoon of flour or raw egg yolks. Others achieve the same results by cooking a finely diced potato along with the vegetables. To finish borsch in a traditional way, most old country cooks mash together a bit of salted pork with some raw onions to a smooth paste. They claim that without this final5 touch, borsch lacks its character.

      6. Borsch has one great virtue for a busy homemaker. It can be made a day in advance and reheated without any loss of quality. In fact, experts of borsch are convinced beyond any doubt that a reheated borsch from a previous day is more flavourful than when eaten the same day it is made.

4. Speaking

    T: You know, eating habits differ from country to country and each country has its unique cooking traditions. Today we have guests from different countries and let’s listen to them. They are going to tell us about their traditional dishes.

 

Ukraine:

      To begin with, I’d like to introduce myself. My name is … I’d like to tell you about our national  6 cuisine.

      Ukrainian cuisine is very varied, and Ukrainians are known for their hospitality. They never miss a chance to invite you to a family gathering. Women gladly spend a lot of time and energy in the kitchen cooking for family and guests.

      The dishes of Ukrainian cuisine are popular far beyond the borders of the country. The most favourite and the most famous of them is Ukrainian borshch with pampushkas. Borshch is a soup based on beetroot with meat and vegetables with served with sour cream. There are about 30 kinds of Ukrainian borshch. The dish is very substantial and sustaining.

      Ukrainian cuisine is rich in pork dishes: home-made sausages, kruchenyky, aspic,ovenbaked ham and pechenia. And of course, the leading position belongs to “salo” which can be eaten fresh, salted and baked.

      Halushky, varenyky and mlyntsi are also widely spread in Ukraine.

      Fish dishes are an essential part of Ukrainian cuisine, including carp baked under sour cream, carp baked in honey, sichenyky, etc.

     Ukrainians have a tradition of drinking spirits. Horilka is a popular spirit for adults, mostly men. Women enjoy wine, nalyvka or vyshnivka.

 

Italy:

      Good morning. I’m from Italy and my name is … Italian cuisine is one of the most popular cuisines in the world. In many countries Italian restaurants with typical Italian dishes such as pizza and pasta can be found in nearly every town.

      Italy is renowned for its olive oil, cured meat, cheese and rich tomato sauces.

      Olive oil is the predominant oil used in cooking and seasoning.

      Italy is surrounded by the sea that’s why fish and seafood are very popular foods. The cuisine uses a lot of fresh, dried, ground herbs and spices to prepare sauces and dishes.

     And I should say that you haven’t eaten pizza until you’ve eaten Italian pizza, and you can probably say the same for pasta too.

 

Japan:

       If we asked you to think of one Japanese food, what comes to your mind? Sushi, raw fish, tempura, tofu? Good.

      Japanese cuisine is full of variety of gifts of the sea, vegetables, soya and beans. Rice has been the most important food in Japanese cuisine.  

      Our national meal is sushi. I don’t think there are many people nowadays who haven’t heard or haven’t tasted sushi. The most common ingredients are sushi rice, tuna, squid and prawns.

      'Tempura is another national dish made of seafood and vegetables deep fried in tempura batter.

      Shiit'ake are the most popular mushrooms in Japanese cooking.

A friendly advice from me: try to avoid the kind of sushi which contains fugu, it can cause severe poisoning if not prepared properly.

 

Bulgaria:

      My name is Tsvetelina Mechkova and I’m from Bulgaria. I’d like to tell you about our national food. Bread takes the main place in Bulgarian cooking. Our national dish is banitsa. This is a pie with curd. Other national dishes include lyutenitsa (pepper relish) and tarator (cold soup).

      Traditional Bulgarian foods include fresh and pickled vegetables, salads, soups, stuffed vegetables, spicy sausages and cheese dishes. Salad serves with every meal. Cold and hot soups are typical for my country. And, of course, I should mention of our national vegetable, Bulgarian pepper, which we like and cook in different forms.

     The national drinks are well-known sour milk and Bulgarian wine.

 

Russia:

      Original  Russian cuisine is famous for exotic soups, cabbage schi and solyanka, which is made of7 assorted meats. Russians are great lovers of pelmeni, small Siberian meat pies boiled in broth.

      Every housewife of any experience has her own recipes for pies, pickles, and sauerkraut. Even more varied is the choice of recipes for mushrooms, one of the most abundant gifts of our woods. They are fried, pickled, salted, boiled and what not.

     "No dinner without bread," goes the Russian saying.  As to rye bread, Russians eat more of it than any nation in the world--a peculiarity of the Russian diet.

     As the Russian custom has it, a festive table isn't worth this name without a bottle of vodka. Of our folk soft drinks, kvass is the best-known. It goes down best on a sultry summer day. If you add it to chopped-up meat and vegetables, you get okroshka, a delicious cold soup which is the favorite dish of many Russian especially in the summer time. 

 

Great Britain:

     If you ask foreigners to name some typically English dishes, they will probably say "Fish and chips" then stop. It is disappointing, but true that, there is no tradition in England of eating in restaurants, because the food doesn't lend itself to such preparation. English cooking is found at home. 

      You cannot really start your day in Britain without having the traditional full English breakfast.  A full English breakfast comprise of bacon, sausages, fried tomatoes, fried eggs and toast. 

      After breakfast is done, we move on to the traditional lunch. Lunch is somewhat similar to the Sunday dinner in an American home where it is a big occasion for the whole family. There is often the all-important roast which is a piece of roast meat from either chicken, pork, beef or lamb, served with roast potatoes and boiled cabbages.

      When the clock strikes five, it signals the start of tea-time. This is a favorite meal for the British. Tea-time usually consists of biscuits and cakes to go with the tea. There are many traditional biscuits and cakes that are usually served such as scones, shortbread biscuits and jam tarts. 

      Supper is a small meal just before you go to bed. Some people would just have cocoa and cheese while others might have bread with ham and a cup of tea.

      There are other dishes that make up traditional British cuisine:

- Bangers and Mash – Sausages served with mash potatoes.

- Shepherd’s Pie – A layer of minced lamb covered with mash potatoes. There are many variations for this dish with the minced lamb replaced by either ground beef or seafood.

- Steak and Kidney Pie – Needs no explanation, the name says it all.

- Fish and Chips – An old British favorite.

- Chicken Tikka Masala – It might sound Indian but this is a British dish born and bred.

 5. Grammar practice

     T: I’m glad you know a lot about traditional dishes of different countries. It’s time for us to revise our grammar material.

6. Vocabulary practice

   1)  T: Everyone has his favourite dish and knows its recipe. Let’s read the recipe and fill in the gaps.

 Read the recipe. Fill in the gaps using the verbs.

Chicken Kyiv

 

This tasty dish is named after Kyiv, the capital city of Ukraine. These stuffed chicken breasts are usually fried, but it is easier to cook them in the oven.

Ingredients: 3 tablespoons of butter or margarine, softened

                      2 teaspoons of fresh lemon juice

                      0.25 teaspoon of dried dill

                      0.25 teaspoon of salt

                      1 skinless, boneless chicken breast halves pounded thin

                      1 egg

                      1/3 cup of seasoning

Steps: cook, roll, mix, pre-heat, put, spread

1. 1) ______ oven to 220 C.

2. In small bowl 2) _______ butter, lemon juice, dill and salt until well blended.

3. 3) _______ some butter mixture over each chicken cutlet.

4. From the short end, 4) _______ up, at the same time turning the long edges of the chicken

toward the center and secure with a toothpick.

5. Lightly beat egg in a bowl.

7. Dip the rolled chicken in egg, then roll in the seasoning to cover completely.
