Among the first impressions for all the visitors who come to Ukraine is its national food. Ukrainian cuisine is diverse and unique. It has a rich history and is very popular in Slavic countries. Ukrainian cuisine is closely linked to the customs, culture, and way of life of the Ukrainian people. Ukrainians like to cook and eat tasty, homemade food.

The most popular Ukrainian dish is borsch. This thick and delicious soup is prepared with a variety of ingredients including meat, mushrooms, beans, and even prunes. How to cook borsch?Ingredients:beetrootonionmeattomatoes or tomato pastecarrotspotatoesgreenscabbagesaltpowder peppersunflower oil. To start with, fill a pan with water, then put washed meat there. Boil it about half an hour. Before meat starts boiling, remove the foam from water surface. It’s important. Next stew washed vegetables (two beetroots, one carrot, two onions) on a frying pan. Add two tablespoons of tomato paste and four tablespoons of sunflower oil. Stew the vegetables for around ten minutes. Now put one shreddedcabbage in the pan. After ten minutes put four sliced potatoes and some salt there. Wait for another ten minutes and add stewed vegetables from frying pan with bay leaf and greenery. All components put together should boil for around five to seven minutes. Our borsch is ready now!

VARENYKY Another must-try dish in Ukraine is varenyki. Just like borshch, traditional dumplings spearheaded the voyage of Ukrainian cuisine across the globe. Combined with the piping-hot plate of borshch, those two are Ukrainians’ food of choice in sickness and in health. Varenyky can be simply described as boiled dumplings with different fillings: potatoes, cottage cheese, meat, liver, even cherries or bilberries. The sweet version of varenyky is usually served with sour cream and honey, and is a tasty and healthy substitute for the calorie-counting sweets lovers. So, the choice is up to you! Conveniently varenyky can be made out of the cheapest ingredients available. Dough is a simple mix of flour, water and salt.

HOLUBTSIThis dish is very popular in Ukraine, though it is not easy to cook. First, you have to prepare the stuffing – a mixture of rice, onion, carrot and forcemeat, and then you need to wrap it into boiled cabbage leaves. When the preparation is done, you should simmer the holubtsy for about an hour in a tomato souse. This is so yummy!«Holubtsi» the best recipe, English subtitles.

DERUNY This dish is very popular in Ukraine because on the one hand, it is easy to prepare and, on the other hand, it tastes delicious! Usually these thin potato pancakes are just served with sour cream; however, they may be filled with mushrooms or meat, that makes them even more nourishing and succulent. Ingredients:potatoes – 1 kg;sauerkraut – 300 g;eggs – 2 pieces;onions – 1 head;wheat flour – 100 grams;milk – 200 grams;greens; salt; vegetable oil for frying. Potatoes wash, peel and grate on a coarse grater into a separate bowl. Gently squeeze to remove excess juice. There may be hammered in chicken eggs. Onion finely chop, to attach to other components. Pour the prepared milk, add the flour. Salt. The mixture should be not too runny, but not thick. To bring it to the desired consistency, gradually adding milk or flour. In a pan heat the vegetable oil. You may want to add a little fat or butter. Potatoes to score a tablespoon and place on a pan. Each dranik be pressed to become flat. Fry for 3-4 minutes on each side, the tracking, so it wouldn't burn. Served pancakes with greens and sour cream. Bon appetit!

BANOSH WITH BRYNZA The highlands of Carpathian Mountains are revered to as the kingdom of Ukraine’s most luscious dishes. Bordering with no less than 4 countries (Romania, Slovakia, Hungary, and Moldova), Carpathian cuisine brings together the best tastes of each land. However, region’s most famous contribution to Ukrainian menu is banosh. This traditional food of highland shepherds is essentially corn flour, cooked in sour cream, with the tasty additions of brynza – local salty sheep cheese, wild white mushrooms (preferably hand-picked from the nearest forest!) and shkvarky (scrunchy bits of pork fat). Those, caring about the calories, can easily omit the last one. The true banosh is cooked on fire, thousands of meters above the sea level in the midst of impressive Carpathian peaks and flourishing valleys, and always by men.

SALOThe description of Ukrainian cuisine would be incomplete without salo (pork fat). Ukrainians regularly joke, "Salo is our national pride". Placing a thin slice of salo on black bread with garlic and salt is a quick and simple way to a delicious snack. Salo (bacon, lard) occupies a special place in the Ukrainian cuisine. We just love it, especially on a piece of homemade bread with a clove of garlic. That’s why we don’t understand why some foreigners find it strange or even unsavory to eat fresh raw lard… However, if you are not ready to have a bite of salo, you should at least try it in a form of mousse, whipped with herbs and spices. This appetizer is often served in the Ukrainian traditional restaurants. However, it is proved that salo is a healthy product, which can even prevent atherosclerosis.

A favorite Ukrainian dish is homemade baked sausage. Ingredients:1 kg pork1 – 2 cloves garlic or 1/2 teaspoon marjoram 150 g lard (pork back fat)thin pork intestinesbrothpotatoes1 onionground peppersalt       Put pork through a meat grinder or chop it fine, add salt and ground pepper, rubbed garlic, onion, some broth, chopped lard (pork back fat), mix it all well and stuff thin pork intestines with this mass. By stuffing pork intestines with the mass, twist it in each 15 – 20 cm. Then bind the ends of sausages. Boil the sausages in salted water for 15 – 20 minutes and fry it in lard (pork back fat). Separate the sausages from each other, put on a dish and pour fat of its frying over it. Place fried potatoes on a dish around the sausages. Serve cucumbers, tomatoes, sauerkraut and greens separately. A favorite Ukrainian dish is homemade baked sausage.
